Ingredients
200 g cottage cheese
1 apple
1 tbsp almonds
1 tsp cinnamon
1 tsp coconut oil
1 tsp honey
Method
You’ll need: frying pan · chopping board · knife
Wash the apple, core it and cut it into small cubes.
Heat the coconut oil in a small frying pan and briefly cook the apple with the cinnamon over a medium heat until soft and fragrant.
Toast the almonds briefly in a second, dry frying pan until lightly golden.
Put the cottage cheese in a bowl and spread the warm cinnamon apples on top.
Scatter over the toasted almonds and finish with a little honey if you like.
Best served straight away, while still lukewarm.
Good to know
When mornings need to be quick, this bowl is a really lovely option. Warm, creamy and pleasantly satisfying without feeling heavy.
Swaps
Almonds → walnuts (more omega-3 fatty acids), honey → date syrup (unrefined sweetness), apple → pear (often a little milder, with fibre), cottage cheese → skyr (plenty of protein, slightly different texture)
Allergens
Contains milk and tree nuts. Suits children well if the almonds are finely chopped or left out, and during pregnancy it's fine as long as you use pasteurised cottage cheese.
