Method

You’ll need: stick blender · mixing bowl

  1. Put the cottage cheese, honey and vanilla extract in a tall container.
  2. Blend everything with a stick blender until completely smooth and creamy.
  3. Transfer the cream to a bowl and gradually stir in the almond flour until it has a dough-like consistency.
  4. Fold in the chocolate chips only briefly so the dough stays nice and compact.
  5. Chill the cookie dough briefly if you like it firmer.
  6. Serve it straight from the bowl, as it is or with a few extra chocolate chips on top.

Good to know

When you fancy something sweet but don't want a heavy dessert, this is just right. Creamy, soft and ready in a few minutes.

Swaps

Honey → date paste (adds a little fibre). Chocolate chips → chopped dark chocolate without refined sugar (usually a little higher in cocoa). Almond flour → finely ground oats (more soluble fibre). Cottage cheese → skyr (also with plenty of protein, usually a little smoother).

Allergens

Contains milk and almonds; depending on the chocolate chips, may also contain soya or traces of nuts. Generally suitable for children if the chocolate suits their age; in pregnancy fine with pasteurised cottage cheese.
