At a glance Serves 2 Prep time: 15 min No cooking needed Total time: 15 min Calories: 260 kcal per serving Protein: 25 g Fat: 12 g Carbs: 8 g Ingredients 250g ricotta 30g vanilla protein powder (unsweetened) 1 cup of espresso 1 tbsp cocoa powder 20g hazelnuts Method You’ll need: hand mixer · chopping board · knife · mixing bowl · sieve
Make an espresso and leave it to cool in a cup for 10 min. Put the drained ricotta in a bowl with the vanilla protein powder and the espresso. Whisk everything with a hand mixer for about 3 min, until the cream is airy. Spoon the mousse into two dessert glasses and dust the cocoa powder over the top through a fine sieve. Roughly chop the toasted hazelnuts, scatter them over the cocoa and chill the dessert. Good to know Forget heavy cream. With ricotta and a spoonful of protein powder you can whip up a coffee cream that tastes like the creamiest tiramisu.
Swaps Ricotta → Greek yoghurt (if you prefer a slightly tangier, fresher flavour and don't want to use cheese).
Cooking tips The espresso must be completely cold. If you pour it into the ricotta hot, the protein curdles and the cream separates into water and lumps.
Storage The dessert sets really well in the fridge and tastes even more strongly of coffee after two hours.
