High-protein chicken skewers
High-protein chicken skewers with chicken breast, courgette, pepper, olive oil and soy sauce – an easy high-protein recipe for the frying pan or barbecue.
Cut the chicken breast into even cubes. Cut the courgette and pepper into similar-sized pieces and briefly soak the wooden skewers in water.
Stir the olive oil with the soy sauce, paprika, salt and pepper. Pour the marinade over the chicken breast, courgette and pepper and mix everything well.
Thread the chicken breast, courgette and pepper alternately onto the wooden skewers. Don't push the pieces too tightly together, so everything cooks evenly.
Fry the skewers in a hot frying pan with a little olive oil or grill them over a medium heat. Turn them regularly until the chicken breast is browned all over and cooked through.
Leave the chicken skewers to rest briefly so the juices settle. Season with a little pepper or a dash of soy sauce if needed.
Serve the high-protein chicken skewers hot, ideally with a fresh salad, roast veg or a creamy yoghurt dip (plant-based, to keep it dairy-free).
Good to know
These skewers are uncomplicated and genuinely good for everyday cooking. Juicy, well seasoned and on the table fast. Just what you need after a long day.
Swaps
Chicken breast → turkey breast (similar protein content and usually just as lean). Pepper → broccoli (also contains fibre and vitamin C). Soy sauce → coconut aminos (milder in flavour, usually less salty). Olive oil → avocado oil (heat-stable, mainly monounsaturated fatty acids).
Allergens
Contains soya and gluten (soy sauce) – use tamari for a gluten-free version. For children, season mildly and serve the skewers in a suitable size; in pregnancy, it's important that the chicken is cooked right through.
