High-protein chicken ramen with shiitake and egg
High-protein chicken ramen made with chicken bone broth and ginger, poached chicken breast, ramen noodles, shiitake, spinach and a soft-boiled egg. A dinner with 58 g of protein per bowl.
Slice the ginger and lightly crush the garlic. Bring both to the boil with the chicken bone broth and soy sauce.
Add the chicken breast to the broth and cook it over a low heat for 12 to 15 minutes. Lift it out and slice it.
Boil the eggs for 7 minutes, refresh them in cold water, then peel and halve them.
Slice the shiitake and fry them in the sesame oil for 3 minutes. Cook the ramen noodles according to the packet instructions and drain.
Fish the ginger and garlic out of the broth and add the spinach for 1 minute. Slice the spring onions into rings and the nori sheet into strips.
Divide the noodles, broth, spinach, chicken, mushrooms and eggs between two bowls. Sprinkle with the spring onions, nori and sesame seeds.
Good to know
Ramen doesn't need to simmer for hours if the broth is already made. With chicken bone broth already on hand, the bowl is on the table in half an hour. The egg boils for 7 minutes, so the yolk is still creamy.
Swaps
Chicken breast → skinless chicken thighs (juicier). Ramen noodles → rice noodles (gluten-free with tamari instead of soy sauce). Shiitake → chestnut mushrooms. Spinach → pak choi.
Cooking tips
Cook the noodles separately, or the starch will turn the broth cloudy. Pour the broth into the bowls piping hot so it warms all the other ingredients up again.
Storage
Broth and chicken keep separately for 2 days in the fridge; make the noodles and eggs fresh.
Allergens
Contains gluten, egg, soya and sesame; no milk or nuts. In pregnancy, boil the eggs for 10 minutes so the yolk is firm.
