Ingredients

Method

You’ll need: oven · frying pan · baking dish · chopping board · knife

  1. Preheat the oven to 180 °C (160 °C fan). Cut the courgettes lengthways into thin strips and pat them dry a little if needed.
  2. Heat the olive oil in a frying pan and fry the chicken mince until crumbly. Add the oregano and tomatoes and let everything reduce briefly.
  3. Spread a little of the chicken ragù over the base of a baking dish. Then layer the courgette, chicken ragù and cream cheese alternately.
  4. Repeat the layers until everything is used up. Finish with cream cheese and scatter the mozzarella over the top.
  5. Bake the lasagne at 180 °C for 25–30 min until the mozzarella is golden brown and the courgettes are soft. Let it rest briefly before cutting.
  6. To serve: cut into pieces and serve hot. A green salad with olive oil goes well with it.

Good to know

When you want something hearty, this lasagne is just right. Juicy, creamy and pleasantly uncomplicated.

Swaps

Cream cheese → ricotta (also contains protein, often with fewer additives); mozzarella → cottage cheese (also contains protein); chicken mince → turkey mince (similar nutrient profile); olive oil → ghee (heat-stable and aromatic)

Allergens

Contains milk. Usually good for children if mildly seasoned. In pregnancy, serve it well cooked through and use cream cheese made from pasteurised milk.
