Method

You’ll need: oven · baking dish · chopping board · knife

  1. Preheat the oven to 200 °C (180 °C fan) and lightly grease a baking dish with olive oil.
  2. Cut the chicken breast into bite-sized pieces. Divide the broccoli into small florets and wash the cherry tomatoes.
  3. Briefly brown the chicken all over in olive oil and season with paprika, salt and pepper.
  4. Spread the broccoli and cherry tomatoes in the dish and put the browned chicken on top.
  5. Crumble the feta over the top and bake at 200 °C for 15–20 min, until the broccoli is cooked and the feta takes on a little colour.
  6. Serve the bake straight from the oven. A green salad or some roasted veg goes well with it.

Good to know

A bake like this often saves the evening after work. Little effort, lots of flavour, and at the end there's something warm and satisfying on the table.

Swaps

Feta → cottage cheese (more protein, usually less fat). Chicken breast → turkey breast (similar protein content, slightly stronger flavour). Broccoli → cauliflower (mild, contains fibre). Olive oil → avocado oil (heat-stable, with monounsaturated fatty acids).

Allergens

Contains milk (feta). Well suited to children if the feta isn't too salty and the chicken is fully cooked – also suitable during pregnancy, as long as you use pasteurised feta.
