Ingredients

Method

You’ll need: frying pan · mixing bowl

  1. Pat the chicken breast fillet dry and season with salt, pepper and lemon juice. Leave to stand briefly.
  2. Gently heat the olive oil in a frying pan. Fry the chicken breast fillet on both sides until golden brown.
  3. Stir the mustard and honey together in a small bowl until smooth. Spread the mixture over the chicken.
  4. Turn the heat down a little and finish cooking the chicken in the honey mustard glaze, spooning the glaze from the pan over it several times.
  5. Leave to rest briefly so the juices settle in the meat.
  6. Serve hot with the rest of the honey mustard glaze from the pan spooned over the top.

Good to know

When it needs to be quick, this dish is a real kitchen favourite. The glaze turns tangy and slightly sweet and keeps the chicken nice and juicy.

Swaps

Honey → date paste (unrefined sweetness, also provides a little fibre); chicken breast → turkey breast (similar protein content, lean); medium-hot mustard → unsweetened Dijon mustard (stronger flavour, often with a simpler ingredient list); olive oil → ghee (can take high heat, rich flavour; not dairy-free)

Allergens

Contains mustard. For children, keep the heat mild, cook the chicken right through and no honey for babies under one year old; in pregnancy the dish is fine as long as the meat is fully cooked.
