Good to know
Fruity meets savoury. Frying the apricots caramelises their natural fruit sugars and gives the chicken a whole new flavour.
Swaps
Apricots → peaches (if there are no fresh apricots, firm peaches that aren't too soft work just as well on the skewers).
Cooking tips
Soak the wooden skewers in water for ten minutes beforehand so they don't blacken or burn in the hot pan.
Storage
Once cooked, the skewers keep well in the fridge for two days and taste great cold as a quick snack.
Allergens
Contains milk (in the dip). Completely gluten-free.
