Ingredients
1 organic egg
1 cauliflower
3 tbsp passata
5 cherry tomatoes
1 handful of rocket
50 g grated mozzarella
80 g mozzarella
1 tbsp olive oil
1 tsp dried oregano
Salt and pepper
Method
You’ll need: oven · food processor · grater
Preheat the oven to 200 °C (180 °C fan) and divide the cauliflower into florets. Chop them very finely in a food processor or with a grater until they look like couscous.
Cook the cauliflower briefly, then put it in a tea towel and squeeze it out thoroughly. The drier it is, the sturdier the base will be.
Mix the squeezed cauliflower with the egg, grated mozzarella, salt and pepper. Shape the mixture into a thin, round base on baking paper.
Bake the base at 200 °C for 15–20 min, until golden brown and firm. Then spread it with the passata, season with oregano and top with the mozzarella and cherry tomatoes.
Bake the pizza again at 200 °C for 8–10 min, until the cheese has melted and the topping is hot.
To serve, top with rocket and finish with a little olive oil. Best eaten warm, straight away.
Good to know
If you want a pizza that doesn't sit heavily but doesn't taste like a compromise either, this base is a good solution. It turns pleasantly firm outside and stays nice and moist with the fresh topping.
Swaps
Mozzarella → cottage cheese (more protein). Egg → psyllium husk egg or linseed egg (also provides fibre; binds a little differently). Rocket → lamb's lettuce (milder, also provides folate and fibre). Passata → unsweetened chopped tomatoes (more texture).
Allergens
Contains egg and milk. Usually fine for children if the base is baked soft enough; in pregnancy, no problem with pasteurised mozzarella and well-cooked egg.
