Ingredients

Method

You’ll need: mixing bowl · sieve · grater

  1. Put the low-fat quark in a bowl and stir in a splash of sparkling water until the quark is smooth, light and creamy.
  2. Fold the honey into the quark so the sweetness is evenly distributed.
  3. Carefully wash the wild blueberries and drain them well.
  4. Spoon the blueberries and desiccated coconut over the quark and either stir lightly or leave in layers, as you like.
  5. Chill briefly so the flavours come together and the desiccated coconut absorbs a little moisture.

Good to know

When it needs to be quick, this is the kind of bowl that still looks like something. Creamy, fresh and pleasantly satisfying without being heavy.

Swaps

Low-fat quark → skyr (similar protein, slightly milder flavour); honey → date paste (unrefined sweetness plus a little fibre); wild blueberries → raspberries (more fibre per serving); desiccated coconut → chopped walnuts (more omega-3 fatty acids and more bite)

Allergens

Contains milk. Usually suits children well if you keep the sweetness moderate, and during pregnancy it's generally fine with fresh, well-washed ingredients and pasteurised dairy.
