Ingredients

Method

You’ll need: saucepan · stick blender · chopping board · knife · ladle

  1. Peel the red onion and chop it roughly. Wash the green apple, remove the core and cut it into pieces.
  2. Take the beetroot out of the packet and dice it roughly. Heat the coconut oil in a saucepan and briefly soften the onion, then add the apple and cook gently.
  3. Add the beetroot and pour in the vegetable stock. Cover and simmer gently for a few minutes so the flavours come together.
  4. Meanwhile, finely chop the dill. Stir the cottage cheese with the horseradish and a little sea salt.
  5. Blend the soup until smooth and season to taste with sea salt. Add a splash more stock if it's too thick for you.
  6. To serve, ladle the soup into bowls, top with the horseradish cottage cheese and sprinkle with dill.

Good to know

This soup is savoury, fresh and pleasantly uncomplicated. The sweetness of the beetroot meets a gentle acidity and a cool, tangy cream on top.

Swaps

Cottage cheese → skyr (more protein, less fat). Green apple → pear (milder acidity, a little sweeter). Coconut oil → olive oil (mainly monounsaturated fats). Dill → parsley (more vitamin K and a stronger herby flavour).

Cooking tips

Shop-bought stock often contains yeast extract. For low-histamine cooking, make your own.

Allergens

Contains milk (cottage cheese); horseradish can quickly be too hot for children. In pregnancy, pasteurised dairy products are generally fine – check the label on the cottage cheese.
