Ingredients
- 350g sirloin steak
- 300g broccoli
- 1 tbsp sesame oil
- 4 tbsp soy sauce
- 2 tbsp maple syrup
- 1 piece of ginger
Method
You’ll need: wok · chopping board · knife · mixing bowl · grater
- Cut the sirloin steak across the grain into wafer-thin slices and finely grate the peeled ginger.
- In a bowl, stir the ginger with the soy sauce and maple syrup to make a teriyaki marinade.
- Divide the broccoli into small florets and stir-fry in the hot sesame oil in the wok for 4 min over a high heat.
- Push the broccoli to one side, add the beef strips to the middle and brown them for just two minutes.
- Pour the marinade into the wok, let it bubble and reduce for 1 min and toss the meat in it.
Good to know
Tender beef in a sticky, sweet and salty sauce. This Asian-style stir-fry brings quality protein and crunchy veg together in record time.
Swaps
Sirloin steak → rump steak (a slightly cheaper alternative that's similarly lean and behaves very similarly in the wok).
Cooking tips
Only pour the sweet sauce into the hot pan right at the end. If you add it too early, the syrup burns black.
Storage
Thin beef often turns as tough as an old boot when reheated. This dish really needs to be eaten fresh from the wok.
Allergens
Contains soya. Contains gluten from standard soy sauce. Contains: sesame.
