Peel the sweet potatoes, cut them into rough chunks and cook in salted water until soft. Cook the garlic with them briefly so its flavour mellows.
Drain the sweet potatoes and mash or blend them finely with the garlic, cream and butter. Season with sea salt and black pepper and keep warm.
Pat the beef steaks dry, season with sea salt and black pepper and fry in hot ghee. Add the thyme and brown the steaks well all over.
Leave the steaks to rest briefly after frying. Stir the sweet potato mash until smooth again and season to taste one last time.
Leave the beef steaks whole or slice them. Set aside the thyme from the pan for the finish.
Spoon the sweet potato mash onto plates, arrange the beef steaks next to or on top of it and serve with the thyme.
Good to know
When you want something straightforward that still tastes really good, this dish is a safe bet. The mash is soft and mild, and the steak gets lovely roasted flavours in the pan.
Swaps
Cream → unsweetened coconut milk (dairy-free, creamy texture) | Butter → ghee (contains only traces of lactose, can be heated to high temperatures) | Beef steak → chicken breast (leaner, still plenty of protein) | Sweet potatoes → cauliflower (fewer carbs, also purées well)
Allergens
Contains milk if you use cream, butter or ghee; a plant-based alternative lets you adapt that. For children, tender pieces and mildly seasoned mash work well; during pregnancy, serve the beef well done.
