Ingredients

Method

You’ll need: oven · frying pan · baking tray · chopping board · knife

  1. Preheat the oven to 200 °C (180 °C fan) and take the sirloin steak out of the fridge in good time so it cooks more evenly.
  2. Cut the courgette and yellow pepper into pieces and spread them on a baking tray with the cherry tomatoes and garlic.
  3. Season the veg with olive oil, sea salt and pepper and roast in the oven at 200 °C for 20–25 min until soft and coloured at the edges.
  4. Meanwhile, pat the sirloin steak dry. Heat a heavy frying pan until very hot, add the ghee and sear the steak on both sides.
  5. Leave the steak to rest briefly so the juices spread out better. Then cut it into thin strips and season with sea salt and pepper.
  6. Arrange the roasted veg on plates and lay the beef steak strips on top. If you like, squeeze the soft garlic over the veg.

Good to know

Sometimes you don't need much – just good heat and honest ingredients. This is a straightforward plate with lots of flavour that's properly satisfying.

Swaps

Sirloin steak → rump steak (a little leaner, similar protein content) | Ghee → avocado oil (heat-stable and mild) | Yellow pepper → broccoli (more fibre and folate) | Cherry tomatoes → aubergine (more roasted flavour, contains some fibre)

Allergens

Contains milk components from the ghee. For children, cut it into small pieces that are easy to chew and salt it moderately; during pregnancy, cook the beef all the way through.
