Let the butter soften. Finely chop the parsley and crush the garlic, then stir them into the butter with the lemon juice, salt and pepper to make a herb butter, and chill until serving.
Take the beef steaks out of the fridge in good time and pat them dry. Season with salt and pepper.
Heat the olive oil in a heavy frying pan until very hot. Add the beef steaks and fry over a high heat for 2–3 min without moving them around.
Turn the steaks and finish frying to your liking. For young children and in pregnancy, cook them right through. Then take them off the heat and leave to rest briefly so the juices spread better.
Meanwhile, give the herb butter another quick stir. This makes it easier to spread evenly over the hot meat later.
Arrange the beef steaks and serve with a dollop of herb butter.
Good to know
A good steak doesn't need much – just heat, patience and a bit of timing. The herb butter rounds it off without overpowering the meat.
Swaps
Butter → ghee (suits high heat; contains milk); parsley → chives (milder flavour, also with plant micronutrients); beef steak → rump steak (plenty of protein); olive oil → avocado oil (also good for frying)
Allergens
Contains milk (butter). For young children, only serve well cooked; in pregnancy, beef that is cooked right through is the safe choice.
