At a glance

Ingredients

Method

You’ll need: frying pan · blender · mixing bowl

  1. Trim the beef liver thoroughly and chop it finely, or blitz it to a smooth paste in a blender.
  2. Mix the beef liver, organic beef mince, red onion, smoked paprika, coarse sea salt and black pepper thoroughly in a bowl.
  3. With slightly damp hands, shape the mixture into even, flat patties.
  4. Heat a heavy frying pan and melt the ghee in it. Fry the patties on both sides over a medium to high heat until they're well browned on the outside.
  5. Cook the patties until they're just cooked through in the middle. With liver, cooking it right through is the safe choice.
  6. Serve hot, with a little herb butter if you like and a simple side such as cucumber salad or steamed veg.

Good to know

When liver is well worked in, it tastes much milder than many people expect. That's exactly what I like about these patties: hearty, juicy and no fuss.

Swaps

Beef liver → chicken liver (milder in flavour, also contains vitamin A and B12). Ghee → olive oil (more monounsaturated fats). Red onion → shallot (a little milder, also contains fibre). Herb butter → sliced avocado (provides fibre and monounsaturated fats).

Allergens

The recipe contains milk fat from the ghee and, if you use it, the herb butter. For children, only serve the patties cooked right through. Liver is best avoided during pregnancy because of its very high vitamin A content.

Frequently asked questions

What's in beef liver?

Beef liver contains vitamin A, vitamin B12, folate, copper and iron. Because its vitamin A content is so high, a small amount is enough.

Do red onions suit a sensitive stomach?

Not necessarily. Red onions contain fructans, which can make symptoms such as bloating or a feeling of pressure worse in sensitive people or those with IBS.

Is ghee usually OK if you're lactose intolerant?

Often, yes, because ghee contains only traces of lactose and milk protein. If you have a severe milk protein allergy, it's still wise to be careful.

How often should you eat liver?

Because of its high vitamin A content, liver is more for occasional portions. During pregnancy, it's best avoided altogether.
