Ingredients
300 g beef fillet
300 g asparagus
2 tbsp olive oil
100 g herb quark
1 pinch of pepper
1 pinch of salt
Method
You’ll need: frying pan · chopping board · knife
Cut the beef fillet into even pieces and pat dry if needed. That way it browns better in the pan.
Snap the woody ends off the asparagus and peel it if necessary. Heat the olive oil in a frying pan and fry the asparagus over a medium heat until it takes on a little colour.
Add the beef fillet to the asparagus in the pan. Keep frying everything together until the meat is browned outside and cooked to your liking inside (in pregnancy, cook it right through).
Season with salt and pepper. Take the pan off the heat in good time so the beef fillet stays tender.
Briefly stir the herb quark until smooth. That makes it easier to add to the dish later.
Arrange the asparagus and beef fillet on plates and add the herb quark. Finish with a little pepper if you like.
Good to know
When it needs to be quick, plates like this are my favourite. Juicy, simply flavoured and without much effort. Add something fresh on top and the meal instantly feels more rounded.
Swaps
Herb quark → skyr with fresh herbs (similar protein content). Beef fillet → chicken breast (similar protein content). Asparagus → broccoli (contains fibre and vitamin C). Olive oil → ghee (heat-stable; contains milk).
Allergens
The dish contains milk from the herb quark; for children it's easy to keep mild, and in pregnancy it's generally suitable with the beef fillet cooked right through and fresh, chilled quark.
