Ingredients
300g beef steak
400g asparagus
1 clove of garlic
2 tbsp olive oil
1 tbsp soy sauce
1 pinch of pepper
Method
You’ll need: frying pan · chopping board · knife
Wash the asparagus, snap off the woody ends and cut the spears diagonally into pieces about 4 cm long.
Pat the steak dry with kitchen paper and cut it across the grain into thin strips.
Heat a tablespoon of olive oil in a large frying pan and fry the asparagus and chopped garlic for about 5 minutes until tender-crisp. Take both out of the pan.
Add the rest of the oil to the pan and sear the beef strips over a high heat for just 1 to 2 minutes.
Return the asparagus to the pan, add the soy sauce, toss everything briefly and season with pepper.
Good to know
Juicy beef and crisp asparagus in a savoury soy sauce. This low-carb dinner brings a steakhouse feel straight to your kitchen.
Swaps
Beef steak → chicken breast (a poultry alternative that also goes really well with soy sauce).
Cooking tips
Sear the beef really briefly over the highest heat so it doesn't turn tough and dry in the pan.
Storage
The dish tastes best fresh from the hot pan. Leftovers can be briefly reheated in the microwave the next day, though.
