Rinse the white beans under cold water and drain them well in a sieve. Finely dice the cucumber, roughly chop the mint and mix both with the beans, olive oil and apple cider vinegar. Cut the halloumi into thumb-thick slices and pat them dry with kitchen paper. Fry the halloumi in a dry non-stick frying pan on both sides until it has a golden brown crust. Arrange the warm halloumi on the cool bean salad and serve straight away. Good to know A lukewarm salad for quick weeknight dinners. The freshness of mint and cucumber goes beautifully with the salty grilling cheese.
Swaps White beans → chickpeas (chickpeas have a little more bite and go just as well with the fresh mint).
Cooking tips Really do fry the cheese at the very last minute. Once it cools down a lot, it loses its soft texture and turns rubbery.
Storage You can easily make the bean salad ahead. The cheese, though, is always best eaten straight from the pan.
