Ingredients

Method

You’ll need: frying pan · saucepan · chopping board · knife · mixing bowl · grater

  1. Cook the amaranth according to the packet instructions and let it cool well, so the mixture holds together better later.
  2. Peel the carrots, grate them finely and put them in a large bowl. Mix in the cooled amaranth and the eggs thoroughly.
  3. Snip the chives into fine rings and stir them into the low-fat quark. Season the dip with salt and pepper.
  4. Heat the olive oil in a large frying pan. Shape small fritters from the amaranth mixture and fry them over a medium heat on both sides until golden brown and firm.
  5. Let the finished fritters rest briefly on a plate so they firm up a little.
  6. Serve the high-protein amaranth fritters warm with the chive quark.

Good to know

When you want something easy but still hearty, these fritters are just right. They're golden brown on the outside, moist inside and on the table quickly.

Swaps

Low-fat quark → skyr (similar protein content, often a little milder) | Carrots → courgette (milder, also provides fibre) | Chives → parsley (also adds vitamin K) | Olive oil → ghee (can take high heat and is aromatic)

Allergens

Contains egg and milk; amaranth is naturally gluten-free. Suits small children well if the fritters are cooked soft, and fine in pregnancy with fresh ingredients that are heated through well.
