High-protein air fryer turkey gyros with skyr tzatziki
Air fryer turkey gyros with oregano and paprika, served with skyr tzatziki and red cabbage salad with lemon. A high-protein lunch with 53 g of protein and 352 kcal per serving.
Cut the turkey breast into thin strips and the onion into rings. Mix both with the olive oil, paprika, oregano, cumin and half the salt.
Spread the meat loosely in the basket and cook at 200 °C for 12 to 14 minutes without preheating. Shake the basket twice so the strips brown all over.
Coarsely grate the cucumber, squeeze it out and stir with the skyr, crushed garlic and a pinch of salt to make tzatziki.
Finely shred the red cabbage and knead with the lemon juice and remaining salt until it softens a little.
Serve the gyros with the tzatziki and red cabbage salad.
Good to know
Gyros without a rotating spit and without a fatty edge: the turkey strips still get their roasted edges in the air fryer. With tzatziki and red cabbage, it becomes a proper plateful.
Swaps
Turkey breast → chicken breast (same cooking time). Skyr → 3.5 % fat yoghurt (creamier). Red cabbage → white cabbage (milder). Oregano → thyme (more robust).
Cooking tips
Fill the basket no more than halfway, otherwise the meat steams instead of browning. Tzatziki gets thicker if you squeeze the grated cucumber firmly in a tea towel.
Storage
Gyros and red cabbage salad keep separately for 2 days in the fridge, the tzatziki for one day.
Allergens
Contains milk; suitable for children, and in pregnancy cook the meat right through.
