  1. Cut the pepper and spring onions into small dice and finely snip the chives.
  2. Whisk the eggs with the cottage cheese, salt and pepper and stir in the veg.
  3. Divide the mixture between six silicone muffin cases and sprinkle the grated Alpine cheese over the top.
  4. Put the cases in the basket and cook at 160 °C for 12 to 14 minutes without preheating, until the centre is set.
  5. Leave the muffins to rest for 2 minutes, turn them out of the cases and serve warm or cold.

Good to know

Scrambled egg to go: these muffins bake in a quarter of an hour and still taste good cold from the box the next morning.

Swaps

Cottage cheese → low-fat quark (smoother). Alpine cheese → vegetarian hard cheese (Parmesan-style; stronger flavour). Pepper → mushrooms (more autumnal). Spring onions → chives (milder).

Cooking tips

Six cases fit in a basket of about 5 litres or more; with smaller air fryers, bake in two batches. Lightly grease metal moulds; silicone ones don't need greasing.

Storage

Keeps for 3 days in the fridge, 2 months in the freezer; reheat in the air fryer at 160 °C for 3 minutes.

Allergens

Contains egg and milk; suitable for children, and in pregnancy cook until the centre is firm.
