Finely chop the onion, garlic and red pepper. Rinse the kidney beans and sweetcorn in a sieve and drain.
Heat the olive oil in a large pan and fry the beef mince until crumbly and well browned.
Add the onion, garlic and pepper and fry briefly until the vegetables soften slightly and smell fragrant.
Stir in the tomatoes and season everything with salt, pepper, paprika and a little chilli. Fold in the kidney beans and sweetcorn.
Simmer the chilli gently over a medium heat until it thickens a little and the flavours come together. Stir now and then and season to taste as needed.
Serve hot. Fresh parsley or a dollop of natural yoghurt goes well with it if you like it a little milder.
Good to know
There's something unhurried about a one-pot dish like this. It smells of cooking, not of effort. And the next day it often tastes even more rounded.
Swaps
Beef mince → turkey mince (similar protein content); kidney beans → black beans (similar fibre content); sweetcorn → extra red pepper (less starch); olive oil → avocado oil (heat-stable, mainly monounsaturated fatty acids)
Allergens
The dish can be naturally gluten-free as long as all the products are free from additives. Keep the chilli mild for children, and in pregnancy make sure the beef mince is cooked right through and keep to good kitchen hygiene.
