Ingredients
100g ground hazelnuts
200g spelt flour
140g butter
80g honey
1 egg yolk
36 whole hazelnuts
1 pinch of salt
Method
You’ll need: oven · frying pan · baking tray
Toast the ground hazelnuts in a dry frying pan for 3 to 4 minutes until fragrant, then let them cool.
Knead the spelt flour, hazelnuts and salt with cold pieces of butter, the honey and egg yolk into a smooth dough and chill it for 30 minutes.
Preheat the oven to 175 °C (155 °C fan). Shape 36 balls, place them on two baking trays lined with baking paper, press them flat and put a whole hazelnut in the middle of each.
Bake the cookies one tray at a time at 175 °C for 11 to 12 minutes each, until the edges are golden brown.
Let them firm up on the tray for 5 minutes, then leave them to cool on a wire rack.
Good to know
Toasted hazelnuts and butter – this cookie doesn't need more. Toasting takes three minutes and makes all the difference. You simply press the balls flat, no rolling out needed.
Swaps
Hazelnuts → ground almonds. Honey → maple syrup. Spelt flour → plain flour. Egg yolk → 1 tbsp milk.
Cooking tips
Keep stirring the hazelnuts while toasting – they quickly turn too dark. Honey makes the dough softer, so it needs to be chilled.
Storage
Keeps for 2 to 3 weeks in a cookie tin.
Allergens
Contains gluten (spelt), hazelnuts, milk (butter) and egg. Because of the honey, not suitable for children under 1 year old.
