Green witch's soup with broccoli, peas and a yoghurt spider web
Green witch's soup made with broccoli, peas, spinach and potatoes, with a yoghurt spider web and toasted pumpkin seeds. A family-friendly Halloween lunch in 40 minutes.
Dice the onion and garlic and cook them gently in the olive oil in a large pan for 3 minutes until soft and translucent.
Peel the potatoes and cut them into cubes. Divide the broccoli into florets, peel the stalk and dice it too.
Add the potatoes, broccoli and vegetable stock and simmer, covered, for 15 minutes. Add the peas and cook for another 5 minutes.
Stir in the spinach until it wilts, then blend the soup until smooth. Season with nutmeg, salt and pepper.
Toast the pumpkin seeds in a dry frying pan for 3 minutes.
Ladle the soup into bowls, pipe the yoghurt on top in circles and drag a knife from the centre outwards to make a spider web. Scatter over the pumpkin seeds.
Good to know
A green soup of broccoli, peas and spinach bubbles away in the witch's cauldron. A yoghurt spider web turns it into a Halloween meal that even veg dodgers will try. It's ready in 40 minutes.
Blend the soup straight after adding the spinach and it stays bright green. For a fine web, put the yoghurt in a freezer bag and snip off a small corner.
