Ingredients
200 g spinach
2 apples
1 piece of ginger (about 2 cm)
1 unwaxed lemon
300 ml water
2 handfuls of water
1 tbsp maple syrup
Method
You’ll need: blender · chopping board · knife
Wash the spinach, apples, ginger and lemon thoroughly. Core the apples, peel the lemon and roughly chop everything.
Put the spinach into the blender first. Then add the apples, ginger, lemon, water and maple syrup.
Blend briefly on a low setting first so the ingredients come together. Then blend until smooth and creamy.
If the smoothie is too thick for you, add a little water and blend briefly again. For extra freshness, chill it briefly before drinking.
Taste and adjust the balance of sweet and sour with a little more maple syrup or lemon if needed.
Pour into glasses and serve immediately.
Good to know
Sometimes you just want something that tastes fresh, green and simple. This smoothie is exactly that: bright, lively and in the glass in no time.
Swaps
Spinach → kale (also contains vitamin K, with a slightly stronger flavour); apples → pears (often milder); maple syrup → dates (also add fibre); water → coconut water (naturally contains potassium, with a gentle sweetness)
Allergens
Naturally free of milk, egg, gluten and nuts. Ginger and lemon often taste quite intense to children; in pregnancy, normal kitchen amounts of ginger are usually fine, but if you have symptoms or are unsure, check with your midwife or doctor.
