Ingredients
2 handfuls of spinach
150 g mango
1 banana
300 ml coconut water
1 tbsp chia seeds
1 tbsp lemon juice
1 piece of fresh ginger (about 2 cm)
Method
You’ll need: blender
Wash the spinach thoroughly and put it into the blender with the mango.
Break the banana into pieces and add with the peeled, finely grated ginger.
Pour in the coconut water, chia seeds and lemon juice.
Blend everything on high until the smoothie is fine, creamy and evenly green. Blend again briefly if needed.
Taste and, if needed, add a little more coconut water to get the consistency you want.
Pour into glasses and serve straight away. Garnish with chia seeds or coconut flakes if you like.
Good to know
For me, a smoothie like this is the simple way to bring something fresh into the day. Creamy, fruity and with a pleasant warmth from the ginger in the background.
Swaps
Spinach → lamb's lettuce (milder flavour, also contains folate); mango → pineapple (provides vitamin C); coconut water → unsweetened tinned coconut milk diluted with water (creamier); chia seeds → oats (also provide fibre; contain gluten unless labelled gluten-free)
Allergens
Naturally free from gluten, egg and milk; chia seeds may not agree with sensitive people. For children, keep the ginger mild, and in pregnancy use well-washed spinach and fresh ingredients.
