Ingredients
100 g baby spinach
1 cucumber
1 apple
300 ml coconut water
1 tbsp lemon juice
Method
You’ll need: blender · chopping board · knife
Wash the baby spinach, cucumber and apple thoroughly. Cut the cucumber and apple into rough chunks.
Core the apple if needed. Put the baby spinach, cucumber and apple in the blender.
Add the coconut water and lemon juice. Make sure the baby spinach sits between the juicier ingredients.
Blend everything briefly on a low setting first, then on high. Blend until the smoothie is fine and even.
Check the consistency and blend a little longer if needed. This makes the smoothie especially smooth.
Serve the green cucumber spinach smoothie well chilled, straight after blending.
Good to know
When you want something fresh and uncomplicated in the morning, this green smoothie is just right. It tastes bright, juicy and pleasantly mild.
Swaps
Apple → pear (similarly mild, a little more fibre) | coconut water → cold water (less natural sugar) | baby spinach → lamb's lettuce (also contains folate and vitamin C) | cucumber → celery (more savoury, a little more fibre)
Allergens
The recipe is naturally free from milk, egg, gluten and nuts. For children with a sensitive tummy, raw green smoothies are best in small portions, and during pregnancy thoroughly washed baby spinach matters most.
