Ingredients

Method

You’ll need: blender · juicer · chopping board · knife · sieve

  1. Wash the celery, cucumber, apple and mint. Core the apple and cut everything into rough pieces.
  2. Put the celery, cucumber and apple in a blender or juicer and blend or juice everything finely.
  3. Blend the mint in briefly, or chop it finely and stir it in.
  4. Only stir in the water kefir at the end. Don't heat the drink, so it keeps its fizz.
  5. Pour the drink through a sieve if you like it finer.

Good to know

A glass like this looks fresh and clear straight away. Tart, cool and slightly sour – just right when you want something low-key.

Swaps

Celery → fennel (slightly milder, also provides fibre) | Cucumber → raw courgette (similarly mild, a little more folate) | Green apple → pear (milder flavour, also contains pectin) | Fresh mint → lemon balm (gentler, with a similar freshness)

Allergens

Celery is one of the allergens that must be declared; for children keep it mild, and during pregnancy only use cleanly and safely fermented water kefir – if you're unsure, it's better to leave it out.
