Ingredients

Method

You’ll need: oven · frying pan · saucepan · casserole dish · chopping board · knife · sieve · wooden spoon

  1. Preheat the oven to 180 °C (160 °C fan). Tip the giant beans into a sieve, rinse and drain well.
  2. Peel and finely dice the onion and garlic. Heat the olive oil in an ovenproof frying pan or casserole and cook the onion until soft and translucent, then fry the garlic briefly.
  3. Stir in the oregano and paprika. Add the chopped tomatoes, season with sea salt and pepper and bring briefly to the boil.
  4. Carefully fold the giant beans into the tomato sauce. Cover the casserole and braise in the oven at 180 °C for 25–30 min, until the sauce has thickened and the beans are hot and tender.
  5. Take the lid off briefly at the end if you want the sauce a little thicker. Then take the stew out of the oven and leave it to rest briefly.
  6. Serve with chopped parsley and a little olive oil. A piece of sourdough bread or a green salad goes well with it.

Good to know

A stew like this is pure, simple comfort. Little effort, lots of depth, and the oven does the relaxed part.

Swaps

Giant beans → cannellini beans (plenty of fibre too, plus protein). Parsley → dill (also adds a little vitamin K). Oregano → thyme (also provides aromatic plant compounds). Chopped tomatoes → passata without added sugar (often a little milder and smoother in the sauce).

Allergens

The recipe is naturally vegan and gluten-free, as long as you don't serve it with something that contains gluten, such as the sourdough bread. If you're not used to pulses, start with a smaller portion; for children, season more mildly, and in pregnancy the dish is fine with everything heated well.
