Ingredients
50 g jumbo rolled oats
150 ml coconut milk
1 tbsp chia seeds
1 small banana
1 tbsp desiccated coconut
1 tsp turmeric
1 pinch of black pepper
½ tsp ground ginger
Method
You’ll need: chopping board · knife · grater · jar with lid
Put the oats and chia seeds in a jar with a lid. Add the turmeric, ground ginger and black pepper and mix briefly.
Pour in the coconut milk and stir everything thoroughly, or close the jar tightly and shake it. Make sure the spices and chia seeds are evenly distributed.
Leave the mixture in the fridge so the oats and chia seeds can swell. Overnight, the texture becomes especially creamy.
In the morning, stir the overnight oats well. If they're too thick, simply stir in a small splash of coconut milk.
Slice the banana and have it ready.
Top the overnight oats with the banana and desiccated coconut and serve straight away.
Good to know
A breakfast like this feels quietly good. Quickly prepared in the evening, creamy, mild and nicely spiced by the morning. On cool days especially, I love this warm note.
Swaps
Banana → pear (a little more fibre), coconut milk → coconut yoghurt (milder flavour), chia seeds → ground linseed (fibre and omega-3 fatty acids), desiccated coconut → chopped walnuts (more unsaturated fats).
Allergens
Contains gluten (oats, unless labelled gluten-free). Season mildly for children, and in pregnancy normal kitchen amounts of turmeric and ginger are generally unremarkable. Contains: gluten (oats).
