Ingredients
500 ml almond milk
1 piece of ginger (about 3 cm)
1 cinnamon stick
1 tbsp olive oil
1 tbsp maple syrup
1 unwaxed orange
1 tsp pepper
Method
You’ll need: saucepan · grater
Peel and finely grate the ginger. Wash the orange in hot water, grate a little of the zest and squeeze the juice.
Put the almond milk in a small saucepan with the ginger, cinnamon, orange zest and pepper. Warm everything slowly over a low heat without letting it boil.
Stir in the olive oil and let the mixture infuse gently for a few minutes. That way the spices and milk come together evenly.
Remove the cinnamon and strain the golden milk finely if you like. Then season to taste with the maple syrup and a little orange juice.
Warm briefly once more if needed. The spices should come through but not taste hot.
Pour into mugs while hot and serve straight away.
Good to know
A mug like this feels wonderfully cosy. Warm, rounded and nicely spiced. Just right for unhurried moments.
Swaps
Almond milk → unsweetened oat milk (naturally contains carbohydrates and a little fibre; contains gluten unless labelled gluten-free); maple syrup → date paste (also provides small amounts of minerals and fibre); olive oil → coconut milk (makes it creamier and also contains fat); orange → lemon (fresher acidity, also provides vitamin C)
Allergens
Contains tree nuts (almond milk); for children, reduce the pepper considerably, and in pregnancy normal cooking amounts of ginger and cinnamon are usually fine, though very large amounts aren't advisable.
