Ingredients

Method

You’ll need: frying pan · saucepan · chopping board · knife · sieve

  1. Cook the potatoes in salted water until just tender, drain them and cut them into thin slices while they're still warm.
  2. Warm the vegetable stock and stir in the onion, white wine vinegar, olive oil, mustard, salt and pepper to make a well-seasoned marinade.
  3. Pour the hot marinade over the warm potato slices and leave the potato salad to stand so it soaks up the dressing well.
  4. Peel the celeriac, cut it into thick slices and cook briefly in salted water. Refresh in cold water and pat dry.
  5. Coat the celeriac slices in flour, egg and breadcrumbs and fry them in olive oil until golden and the crust is crisp.
  6. Serve the celeriac schnitzel with the potato salad and finish with fresh chives scattered over the top.

Good to know

Sometimes it's the simple plates you remember for a long time. Crisp outside, soft inside, with a potato salad that turns lovely and juicy as it stands.

Swaps

Breadcrumbs → wholemeal breadcrumbs (also provide fibre); plain flour → spelt flour (a little stronger in flavour); white wine vinegar → cider vinegar (milder and often a little more aromatic); olive oil → ghee for frying (heat-stable with a buttery note; contains milk)

Allergens

Contains egg, gluten, celery (one of the allergens that must be labelled) and mustard. Good for children if the celeriac schnitzel are soft enough; in pregnancy, fine with eggs that are cooked right through.
