Ingredients
500g cauliflower
400ml coconut milk
50g cashews
1 onion
2 cloves of garlic
1 piece of ginger (about 2 cm)
2 tbsp coconut oil
1 tbsp red curry paste (vegan, without added sugar or seed oils)
Toast the cashews in a dry frying pan over a medium heat until fragrant and lightly browned. Take them out and set aside.
Break the cauliflower into small florets. Peel and finely chop the onion, garlic and ginger.
Heat the coconut oil in a large frying pan or wide saucepan. Soften the onion, garlic and ginger until translucent, then briefly fry the red curry paste and turmeric with them.
Stir in the coconut milk and bring briefly to the boil. Add the cauliflower, cover and simmer gently until soft but still with a little bite.
Season to taste with lime juice, salt and pepper. If you like, let the curry simmer uncovered for a moment before serving so the sauce thickens a little.
Spoon into bowls and scatter over the roasted cashews.
Good to know
A curry like this feels like little effort and lots of warmth. It's creamy, spicy and just right when you want to keep things simple.
Swaps

Allergens
Contains tree nuts from the cashews; depending on the product, curry paste may contain chilli or other allergens. For children, adjust the heat; during pregnancy, pay attention to good kitchen hygiene and make sure the paste is well heated.
