Preheat the oven to 180 °C (160 °C fan). Wash the apples and carefully remove the cores without cutting through the base.
Roughly chop the walnuts and mix them with the honey and cinnamon to make a sticky filling.
Stand the apples in an ovenproof dish and spoon the walnut and honey mixture into the hollows. Top with a little butter.
Bake the apples at 180 °C for 20–25 min, until soft and the filling is lightly browned. This can vary a little depending on the apple variety.
Leave to rest briefly out of the oven so the juices settle and the filling isn't too hot.
Arrange the warm baked apples on plates and serve with Greek yoghurt.
Good to know
A baked apple is one of those desserts that brings instant warmth to the table. Soft outside, sweet and nutty inside – simple and properly cosy.
Swaps
Greek yoghurt → skyr (more protein, thicker texture); honey → date syrup (unrefined sweetness with slightly more minerals); butter → ghee (buttery flavour, usually very little lactose); walnuts → pecans (milder flavour, also with unsaturated fats).
Allergens
Contains milk and walnuts (tree nuts). Good for children if the apple is soft enough and the nuts are finely chopped (no honey for babies under a year old); in pregnancy it's fine in normal amounts, as long as the dairy is pasteurised.
