Gluten-free Vanillekipferl (vanilla crescent cookies) with buckwheat and almonds
Gluten-free Vanillekipferl (vanilla crescent cookies) made with buckwheat flour, ground almonds and butter, sweetened with coconut sugar and rolled in vanilla. Christmas cookies for snacking, makes about 40.
Grind the coconut sugar finely in a blender. Knead the buckwheat flour, almonds, cornflour, three quarters of the coconut sugar, half the vanilla and the salt with the cold butter in pieces and the egg yolk into a smooth dough.
Wrap the dough in cling film and chill for 30 min.
Preheat the oven to 170 °C (150 °C fan). Shape finger-thick rolls, cut them into 4 cm pieces and bend them into crescents.
Place the Kipferl on two baking trays lined with baking paper and bake them one tray at a time for 10 to 12 min each at 170 °C, until the tips are lightly browned.
Mix the remaining coconut sugar with the rest of the vanilla and roll the Kipferl in it while they're still warm. Then leave them to cool on a wire rack.
Good to know
Vanillekipferl without wheat? Buckwheat flour brings a slightly nutty note that goes well with almonds and vanilla. The Kipferl are very fragile while warm; once cool they turn crumbly and firm.
Buckwheat dough is more crumbly than wheat dough. Knead it only briefly and shape the Kipferl with cool hands. Roll them while warm so the vanilla mixture sticks.
Storage
Keeps for 3 to 4 weeks in a cookie tin.
