Gluten-free teff apple crumble

Gluten-free teff apple crumble with apples, teff flour, butter, honey and cinnamon: an easy oven dessert with a nutty note and a fruity filling.

Ingredients

Method

You’ll need: oven · baking dish · chopping board · knife

  1. Preheat the oven to 180 °C (160 °C fan) and have a shallow ovenproof baking dish ready.
  2. Peel the apples, remove the cores and cut them into large pieces. Spread the apple pieces evenly in the dish.
  3. Rub the teff flour, butter, honey and cinnamon together with your fingers into loose crumbs. Work quickly so the butter keeps the mixture nicely crumbly.
  4. Scatter the teff crumbs evenly over the apples so the top is well covered.
  5. Bake the crumble at 180 °C for 20–25 min, until the crumbs are golden brown and the apples have softened.
  6. Serve the gluten-free teff apple crumble warm. A little natural yoghurt or a dollop of cream goes well with it.

Good to know

A crumble like this is in the oven in no time and makes the kitchen feel cosy straight away. What I especially like is the contrast between soft fruit and crisp crumbs.

Swaps

Butter → ghee (good for baking; contains milk); honey → date paste (brings sweetness plus some fibre); apples → pears (also provide fibre, slightly milder flavour); teff flour → buckwheat flour (gluten-free, with a nutty note)

Allergens

Contains milk (butter). Gluten-free if you use teff flour certified gluten-free. Good for children – but no honey for babies under 12 months – and fine in pregnancy with fresh ingredients handled hygienically.
