Gluten-free sweet potato toast with avocado: crispy sweet potato slices with creamy avocado, cherry tomatoes, lime juice and fresh herbs.
You’ll need: frying pan · chopping board · knife · mixing bowl
When it has to be quick but can still taste fresh, this is the plate. Warm, creamy, crunchy – and pleasantly uncomplicated.
Sweet potato → roasted aubergine slices (fewer carbs, savoury) Avocado → mashed white beans with a little olive oil (more protein and fibre) Cherry tomatoes → cucumber slices (milder, fresher, lower in histamine) Coriander/parsley → rocket (peppery flavour, more bitter compounds)
The recipe is naturally free from gluten and the most common allergens, but some sensitive people don't tolerate avocado. Season it mildly for children, and during pregnancy make sure the herbs and tomatoes are well washed.
Sweet potatoes mainly provide complex carbohydrates, fibre and beta-carotene. They also contain smaller amounts of potassium and vitamin C.
Avocado mainly contains monounsaturated fatty acids, especially oleic acid. It also provides fibre, folate and some vitamin E.
Not always: with a sensitive stomach or histamine issues, raw tomatoes can cause problems for some people. It varies a lot and isn't the same for everyone.
Lime juice brings acidity and a little vitamin C. It can also slow down the avocado's quick browning a little, although it won't stop it completely.
Both herbs provide vitamin K and various plant compounds in small amounts. The quantities on the plate are fairly small, but they make a big difference to the flavour.
