Method

You’ll need: frying pan · grater

  1. Coarsely grate the Hokkaido squash and potatoes, mix the gratings with a little salt, and after 5 minutes squeeze them out well in a tea towel.
  2. Mix the gratings with the egg, potato starch, nutmeg and pepper.
  3. Heat the olive oil in a frying pan, add 6 flat heaps of the mixture and fry the rösti over a medium heat for 4 to 5 minutes on each side until golden brown.
  4. Squeeze the lemon. Stir together the low-fat quark, horseradish, lemon juice and chopped dill and season with the remaining salt.
  5. Flake the smoked trout into pieces and serve the rösti with the horseradish quark and trout.

Good to know

Squash brings colour and a gentle sweetness to rösti. With smoked trout and punchy horseradish quark, it makes a proper weekend breakfast.

Swaps

Smoked trout → smoked salmon (same advice in pregnancy). Potato starch → 2 tbsp buckwheat flour (also gluten-free). Low-fat quark → skyr. Horseradish → 1 tsp mustard (milder; contains mustard).

Cooking tips

Squeeze the gratings out firmly, or the rösti will turn soft instead of crisp. Only turn them once the edges come away from the pan.

Storage

Rösti taste best fresh; leftovers keep for 1 day in the fridge and crisp up again in the oven at 200 °C in 8 minutes.

Allergens

Contains fish, milk and egg; gluten-free. Smoked fish isn't recommended in pregnancy because of listeria – use a pan-fried trout fillet instead.
