Wash the spinach, let it wilt briefly and squeeze it out well. Then chop it finely so the mixture doesn't get too wet.
Mix the spinach with the ricotta, egg, almond flour and hard cheese. Season with salt, pepper and nutmeg until you have a mixture you can shape.
Bring a large pan of salted water to a gentle simmer. Shape the mixture into gnocchi using two teaspoons or lightly floured hands.
Add the gnocchi to the water in batches and cook until they rise to the surface. Lift them out with a slotted spoon and leave to drain briefly.
Melt the butter in a large frying pan and gently fry the garlic and sage in it until the butter browns slightly and smells fragrant. Toss the gnocchi in it.
Serve the gnocchi hot straight away, with a little hard cheese and freshly ground pepper if you like.
Good to know
These gnocchi are soft, moist and just right when you want something savoury without it feeling heavy. The scent of sage and butter makes them especially cosy.
Swaps
Ricotta → well-drained cottage cheese (more protein); butter → ghee (contains only traces of lactose, good for high heat); hard cheese → vegetarian hard cheese made from sheep's milk (stronger flavour, similar protein content)
Allergens
Contains milk, egg and tree nuts (almonds); generally suitable for children if the gnocchi are served soft, and fine in pregnancy with fresh, hygienically handled ingredients and fully cooked egg.
