Bresaola is air-dried beef from the Valtellina. With pear and melted cheese, it turns savoury and sweet at the same time in the raclette pan. Rocket and balsamic keep it fresh.
Bresaola → sliced turkey breast (milder). Pear → fig. Pine nuts → walnuts. Raclette cheese → gorgonzola (stronger, so use less; in pregnancy only when melted until steaming hot).
Put the bresaola under the cheese so it doesn't dry out. Firm pears such as Conference keep their shape in the pan.
Opened bresaola keeps wrapped in the fridge for 3 days; only wash the rocket just before eating.
Contains milk and pine nuts; gluten-free, no egg. Bresaola is cured raw meat: in pregnancy, leave it out or heat it right through in the pan until steaming hot.
Opened bresaola keeps wrapped in the fridge for 3 days; only wash the rocket just before eating.
