Rinse the quinoa thoroughly in a sieve and cook it in salted water until soft. Then let the steam escape and leave it to cool a little.
Put the cooked quinoa in a bowl and mix it with the eggs until you have a mixture you can shape.
Finely chop the chives and fold them into the quinoa mixture with the crumbled feta and a pinch of salt.
Heat the olive oil in a frying pan and shape small, flat patties from the mixture. Put them straight into the hot pan.
Fry the quinoa patties over a medium heat on both sides until golden brown and lightly crisp on the outside.
Serve the gluten-free quinoa patties warm, on their own or with a fresh salad.
Good to know
These patties are simple, savoury and pleasantly filling. I like them when things need to be quick and there's still room for something fresh on the plate.
Contains egg, and milk from the feta. Usually well suited to children if the patties are fried soft and only lightly salted. During pregnancy, it's important to use feta made from pasteurised milk.
