Ingredients
100 g gluten-free oats
1 banana
2 organic eggs
50 ml milk
1 tbsp coconut oil
1 tsp baking powder
1 pinch of cinnamon
Method
You’ll need: waffle iron · blender · mixing bowl
Grind the oats into a fine flour in a blender. Mash the banana thoroughly with a fork in a bowl.
Add the eggs, milk, coconut oil, baking powder and cinnamon to the banana. Stir everything until smooth, then fold in the oat flour until you have an even batter.
Preheat the waffle iron and lightly grease the plates. Use a little coconut oil, ghee or avocado oil for this.
Pour the batter into the hot waffle iron in portions. Cook the waffles until golden brown and easy to lift out.
Leave the finished waffles to rest briefly on a wire rack. That keeps them a little crisper outside.
Serve the gluten-free oat waffles warm, plain or with yoghurt, nut butter or fresh fruit.
Good to know
When mornings have to be quick, these waffles are a good solution. They're soft, gently sweet and don't need any complicated ingredients.
Swaps
Milk → unsweetened almond milk (dairy-free) | coconut oil → ghee (classic flavour, heat-stable) | banana → unsweetened apple purée (milder sweetness) | milk → natural yoghurt stirred with a little water (more protein, creamier texture)
Allergens
Contains egg and milk; for a gluten-free diet, make sure you use certified gluten-free oats. Nut butter for serving or almond milk as a swap contains tree nuts. Usually well suited to children, and fine during pregnancy with fresh eggs in good condition and clean preparation.
