Gluten-free oat and nut bread with oats, chia, linseed, almonds and pumpkin seeds – moist, seedy and made without flour, yeast or refined sugar.
You’ll need: oven · loaf tin · chopping board · knife · mixing bowl
A bread like this seems unremarkable at first, and then suddenly it's always on the table. It's moist, seedy and pleasantly satisfying. And it needs no flour or yeast at all.
Almonds → walnuts (more omega-3 fatty acids). Sunflower seeds → extra pumpkin seeds (more magnesium). Maple syrup → date purée (natural sweetness plus a little fibre). Coconut oil → olive oil (more monounsaturated fats).
Contains tree nuts (almonds) and seeds; only gluten-free with certified gluten-free oats. Suitable for children in small pieces that are easy to chew; during pregnancy it's usually no concern, but with this much psyllium and linseed it's important to drink enough. Contains: tree nuts.
Oats provide complex carbohydrates, fibre and some plant protein. They're best known for their beta-glucans, and they also contain manganese, magnesium and iron, among others.
Both contain alpha-linolenic acid, a plant omega-3 fatty acid. Linseed also provides fibre and lignans, and soaked, as here, both seeds help bind the dough.
Psyllium husks consist mostly of fibre and should always be eaten with enough fluid. If you're very sensitive to lots of fibre, start with small portions.
They mainly contain unsaturated fats, vitamin E and minerals such as magnesium and zinc. Pumpkin seeds also contain iron.
Maple syrup mainly brings sweetness and only small amounts of minerals such as manganese. In this recipe, those amounts are nutritionally minor.
