Ingredients
250g lean beef mince
200g rice
1 tin of black beans (240g drained weight)
1 avocado
1 unwaxed lime
100g sweetcorn (tinned)
1 onion
1 clove of garlic
1 tbsp olive oil
4 tbsp soured cream
1 bunch of fresh coriander
1 tsp cumin
1 tsp smoked paprika
1/2 tsp chilli flakes
1 pinch of salt
1 pinch of pepper
Method
You’ll need: frying pan · chopping board · knife
Cook the rice for 15–20 min and, while it's still warm, mix it with lime juice and chopped coriander. Leave to stand briefly so it takes on the flavour.
Heat the olive oil in a frying pan and soften the onion and garlic until translucent. Add the beef mince and fry until browned and crumbly.
Stir in the cumin, smoked paprika, chilli flakes, salt and pepper. Add the black beans and sweetcorn and heat everything through together briefly.
Mash the avocado and mix it with lime juice, salt and a little coriander into a quick guacamole. Add a little pepper to taste.
Have the soured cream ready and roughly chop the remaining coriander. That way everything is ready for serving.
Divide the coriander and lime rice between bowls, top with the mince and bean mixture and finish with guacamole, soured cream and coriander.
Good to know
A bowl like this is uncomplicated and still really well rounded. Warm, fresh, creamy and with enough substance for a relaxed dinner.
Contains milk (soured cream). For children, it's best to use fewer chilli flakes. In pregnancy, make sure the mince is cooked right through and use only fresh, perfectly good avocado and herbs.
