Gluten-free lentil stew with savoy cabbage and potatoes
Gluten-free lentil stew with savoy cabbage and potatoes: a hearty stew with lentils, savoy cabbage, potatoes, carrot and garlic for easy everyday cooking.
Rinse the lentils thoroughly in a sieve. Peel and dice the potatoes, trim the savoy cabbage, remove the stalk and cut into thin strips.
Chop the onion, garlic and carrot small. Heat the olive oil in a large saucepan and soften everything briefly until translucent.
Add the lentils and potatoes, pour in the vegetable stock and stir in the bay leaves and thyme. Bring to the boil, cover and simmer gently for 15–20 min.
Add the savoy cabbage and keep cooking until the lentils, potatoes and cabbage are soft. Stir now and then and add a little water if needed.
Remove the bay leaves and season the stew with vinegar, salt and pepper. The flavour can be bold and well-rounded.
Ladle into bowls and serve hot. A dollop of yoghurt (plant-based to keep it vegan) or some chopped parsley goes well with it, if you like.
Good to know
A stew like this is pure comfort. Warm, simple and just right when you want something satisfying without much effort.
Swaps
Lentils → Puy-style lentils (often stay a little firmer and also provide fibre). Potatoes → sweet potatoes (bring more beta-carotene). Savoy cabbage → kale (also provides fibre and vitamin K).
Allergens
The recipe is gluten-free if the vegetable stock is labelled as such. Lentils and cabbage suit many people but can cause wind if you have a sensitive tummy; during pregnancy and for children, the stew is generally fine as long as everything is cooked through.
