At a glance

Ingredients

Method

You’ll need: frying pan · griddle pan · chopping board · knife · spatula

  1. Wash and halve the peaches and remove the stones.
  2. Heat a griddle pan over a medium heat and melt the butter in it.
  3. Place the peaches cut side down in the pan and griddle until browned with distinct char lines.
  4. Turn the peaches and cook briefly on the skin side until they soften but still hold their shape.
  5. Meanwhile, roughly chop the pistachios and have the Greek yoghurt ready.
  6. Arrange the griddled peaches, drizzle with honey, sprinkle with pistachios and serve with the Greek yoghurt.

Good to know

Once peaches are warm, they taste rounder and more aromatic straight away. This recipe is simple, summery and on the table in no time.

Swaps

Greek yoghurt → skyr (also provides protein, similarly fresh) | butter → ghee (suits high heat; contains milk) | honey → date paste (unrefined sweetness, a little fibre depending on the product) | pistachios → walnuts (contain omega-3 fatty acids, stronger flavour)

Allergens

Contains milk and tree nuts (pistachios). Well suited to children in a soft form, but not with a nut allergy, and no honey for babies under one year old. In pregnancy, pasteurised yoghurt and thoroughly washed peaches are the safe choice.
