Ingredients

Method

You’ll need: oven · saucepan · baking tray · chopping board · knife · grater

  1. Chop the apricots very finely and grate the orange zest.
  2. Warm the honey, butter and cream in a pan and let the mixture simmer gently for 2 to 3 minutes.
  3. Stir in the flaked almonds, apricots, orange zest and salt.
  4. Use a teaspoon to place 20 small mounds well apart on a baking tray lined with baking paper and flatten them with a wet spoon.
  5. Bake the Florentines in a preheated oven at 180 °C (160 °C fan) for 8 to 10 minutes, until the edges are golden brown.
  6. Let them cool completely on the tray – only then do they firm up and come away easily.

Good to know

Florentines are really just almonds held together by caramel. With honey, the caramel turns a little darker and more aromatic, and you don't need flour anyway.

Swaps

Cream → coconut milk (dairy-free). Butter → coconut oil. Dried apricots → raisins. Flaked almonds → chopped hazelnuts (stronger).

Cooking tips

Make the mounds on the small side, as the mixture spreads a lot as it bakes. Honey browns quickly, so stay by the oven for the last 2 minutes.

Storage

Stays crisp for 2 weeks in a tin with baking paper between the layers.

Allergens

Contains almonds and milk; honey is not suitable for children under one year old; fine during pregnancy.
