  1. Mix the rice flour, almonds, cornflour, baking powder and salt. Add the cold butter in pieces, the honey, the egg and the grated lemon zest.
  2. Quickly knead everything into a smooth dough, flatten it, wrap it and chill it for 1 hour.
  3. Preheat the oven to 180 °C (160 °C fan). Roll out the dough 4 mm thick between two sheets of baking paper.
  4. Cut out stars, hearts or Christmas trees and place them on two baking trays lined with baking paper. Knead the scraps together and roll them out again.
  5. Bake the cookies one tray at a time at 180 °C for 8 to 10 minutes each, until the edges are light brown.
  6. Leave them on the tray for 5 minutes until they are firm enough to move to a wire rack.

Good to know

Gluten-free shortcrust likes to break when you roll it. With rice flour, ground almonds and a little starch it holds together, as long as you roll it between baking paper. The cookies taste of butter, honey and lemon.

Swaps

Rice flour → millet flour. Cornflour → potato starch. Butter → ghee. Honey → maple syrup.

Cooking tips

If the dough gets soft while you cut out the shapes, put it in the fridge for 10 minutes, baking paper and all. Only bake the cookies until light brown – with honey they brown quickly.

Storage

Keeps for 3 weeks in a tin somewhere cool and dry.

Allergens

Contains milk (butter), egg and almonds; gluten-free if you use gluten-free baking powder. Not suitable for children under 1 year because of the honey.
